West African Beef Stew with Rice and Plantains

This comforting Beef stew is inspired by West African home cooking and pairs beautifully with rice, cassava, or fried plantains.

Ingredients: 

  • 2 tbsp olive oil
  • 1 onion (preferably red)
  • 1 Garlic clove
  • 1 8 oz Fusion Kuisine Tomato Stew
  • 1 Medium Yellow Plantains
  • 1 Cup of White Rice

Instructions: 

  1. Prep the ingredients.
    Cut the beef into cubes. Finely slice the onion and garlic.  Cook Rice and Fry Plantains (see step 8). 

  2. Sauté the aromatics.
    In a pot, heat olive oil over medium heat. Add the sliced onions and garlic, then sauté until fragrant and lightly softened.

  3. Add the beef.
    Add the beef cubes to the pot and stir to coat with the onions, garlic, and oil.

  4. Add water and boil.
    Pour in 8 oz of water. Bring to a boil.

  5. Add the stew sauce.
    Add 8 oz of West African Stew and stir well.

  6. Simmer.
    Reduce the heat and let the stew simmer until the beef is tender and the sauce thickens.

  7. Prepare the plantains.
    Slice the plantains into even pieces.

  8. Air-fry the plantains.
    Place the plantain slices in the air fryer and cook until golden and tender.          

  9. Serve.
    Plate the Beef Stew with White Rice and fried plantains on the side.

 Chef Tips: Spray Plantains with cooking oil before frying.
